My “outlaws” are in town this weekend so it’s time for a Persian feast (my wife is Persian).
What you see here is chicken and halibut kebab. There’s a skewer of tomatoes there too. This is served with rice. The marinade for this is olive oil, onion, saffron & lemon. Marinade overnight if possible!
And here’s a helpful infographic for the BBQ’ers out there!
Drool…How did the halibut turn out, I find it tough to cook, as it can dry out so quickly. I usually have goodluck poaching it, but have been afraid to throw it on the grill.

I like to slice up a few red, green, and yellow peppers along with sliced red onion and mushrooms cut into quarters. Drizzle with olive oil, add a dash of sea salt and some black pepper. Grill on one of those disposable aluminum trays till done to your liking. Hint: if you cook until the onions carmelize, the whole thing is nice and sweet.
Of course you could add whatever you like - eggplant, pineapple, tomatoes, whatever. As long as you use olive oil and keep the salt down, it’s good for ya.
Goes great with almost anything, is inexpensive, and good for you.

Haha, I was kidding. Steak is still my go to BBQ meat. I used to be the loaded potato as well, but I usually skip them all together now, and opt for grilled veggies. Big fan of asparagus on the grill. I grill veggies much the same as you, but I’ll usually mix in some balsamic vinegar with the olive oil, and salt and pepper. Tasty stuff.
I’d like to eat a lot more fish, buy my gf just doesn’t like it, and I hate cooking 2 different things, so I’ll cook what she wants to eat as well.
DSG got me thinking about some fish the other night. So I did up some Basa and put together Quinoa for a light and cool meal after a hot day at the shop.
